Dishes and produce
Xató
An endive salad with salt cod, tuna and anchovies in a sauce of almonds, hazelnuts and dried peppers. It is the county’s signature dish, celebrated on the winter Xató Route.
Each town defends its own recipe; Sitges, Vilanova and Ribes make up the Xató Route.
From the sea
Rice dishes, fish stews and fresh fish, with the Vilanova harbour fish market as the benchmark.
The fish auction at Vilanova harbour takes place in the afternoon when the boats return.
